Let’s Eat

On those cold nights, we need something warm and satisfying for dinner!

I don’t know about you, but I repeat the same meals over and over again. I need a little variety in my life, or else cooking gets boring….really boring. So, throughout this month, I will share with y’all a variety of meals that I have cooked.

My greedy college kids are home, and they are looking for food that they can’t get on campus. So follow me into the kitchen as I cook up some warm, delicious family meals. 

Today’s Meal: Cornish Hens and Potato Cheese Soup

Things you need for the Cornish Hen

  • Cornish Hens (one will feed two adults)
  • 1/2 stick of butter
  • barbecue seasoning
  • pepper
  • smokey paprika
  • barbecue sauce
  • 1 onion
  • 1 green pepper
  • 1 red pepper
  1. Place butter in a dish and add seasonings
  2. Rub the mixture on the Hens
  3. Place all sliced vegetables inside the Hen
  4. Cook for an hour
  5. Remove and rub barbecue sauce on the hens and heat for 15 minutes.

Preheat the oven to 350 degrees and cook for an hour

Things you need for the Potatoe Soup

  • 8 medium to large potatoes
  • 1 stick of butter
  • 1 onion
  • 6 carrots
  • 2 cups whipping cream
  • 2 cups Bone Broth
  • 2 cups milk
  • pepper
  • salt
  • 3 tbsp flour
  • 8-ounce bag of Sharp cheddar cheese 

The soup cooks in 30 minutes!

  1. Wash and peel the potatoes
  2. Dice into cubes
  3. Heat your soup pot on medium heat and coat the bottom of the pan with extra virgin olive oil and one stick of butter
  4. Add potatoes and season as you would to mashed potatoes
  5. Add diced onions and diced carrots
  6. Cook on medium heat until veggies are soft
  7. Add 3 tablespoons of flour and stir
  8. Add bone broth, heavy whipping cream, and milk and cook on medium to high heat (stirring frequently)
  9. Lastly, sprinkle cheese on top
  10. Stir and serve

I served this meal with a Caesar salad and dinner rolls.

  1. You know, I have never put BBQ sauce on my cornish hens. Now that I am looking at your photo, I think I am going to give it a shot. 🍗 But would you stop flaunting your culinary skills then telling us tomorrow to do squats, push ups and weight lifts? 🏋🏻‍♀️🤦🏻‍♀️🧍🏻‍♀️ How much torture do you think we can take Queen B??? 😲
