 have a goodie for y’all this week!

My husband and I went out to dinner this weekend, and we had the best potatoes. So, I had to write down everything I tasted as I bit into this buttery delight.

So, yesterday, I tried it out. Some things are slightly different because I needed to make these potatoes my own, but they tasted the same. My family could not eat them fast enough. Which means they will make a return soon.

What Ya Need

  • Red or White potatoes
  • Sour cream
  • Mozzarella
  • Parmesan
  • Unsalted butter
  • Salt
  • Olive oil
  1. Wash the potatoes
  2. Coat them with Extra Virgin Olive Oil and salt.
  3. Bake at 400 degrees until fully cooked, approximately 30 minutes.
  4. Let them cool for 10 minutes
  5. Cut a circle out of the side of the potatoes, deep enough to stuff it with the cheese mixture
  6. In a separate bowl, stir together sour cream, mozzarella, parmesan, and two tbs of melted butter
  7. Place the cheese mixture into the potato, rub butter on the outside of the potato, and bake until the cheese is bubbly and delicious. FIVE minutes is more than enough (400 degrees).

Choose your portions for each item; it depends on how cheesy you want your potatoes.

  1. This makes me think of my twice baked potatoes which I also now do as photao casserole from time to time. Im a meat person, so most meals have meat in some form, cant remember if I posted that recipie, if not I can send it to you.

        Twice Baked Potatoes
        I lobe doing these sometimes as a complete meal, but i usually have my own spin from those that you can buy elsewhere but the recipie still is about the same.
        This recipie is for several potatoes, tonight when i made them i did about 7 potatoes, you can either boil them or bake them til they are soft inside.(if boiled, remove from water immediately so they dont soak up the water) after they have gotten soft set aside for a few minutes so they cool. After they have cooled for about 10 minutes, slice them in half lengthwise and then scoop put with a spoon and place the centers in a large bowl. After this has been done kinda roughly smash a bit.
        In a bowl add:
        3 TBS sour cream
        4 TBS butter
        1/2 tsp pepper
        1/4 – 1/2 CP shredded cheddar cheese
        and some finely chopped meat, (chipped beef, bacon, ham, pulled pork, chopped brisket are our favorites) if using chipped beef, it will be one jar and the reason i didnt add salt.
        Stir this all together rather well and add the potatoes you smashed up previously.
        With a spoon, pack the potatoes back into thier skins and then add some more cheddar on top. Bake at 350 til thw cheese bubbles on top, about 30 mins or so.

      2. We do them as a whole meal usually, 2 medium size potatoes each. Like i said we do it with cauliflower as well, steam it til aldente and then add to the sour cream, cheese, butter and meat mixture and then put in a parchment lined pan for the oven.

  2. they look delightful and you had me till you said cut out the center and add the gooey fatty lovely cheese etc. yummmy.. I have a smashed one that i was just gonna try and is open on my key board I may try.. and then again I’m eating left overs tomorrow.. hahahhahahha and then try this when I get a little more time.. yes, call me lazy.. lol 😂❣️

      I’m just a fat girl inside and I love cheese, just have to make sure a walk a little extra that day.LOL

      1. hahhahaha oh good.. I bailed and a friend brought shepherd’s pie last night after all that talk.. fully immersed in yummy cheese.. lol.. So look what we inspired (YOU)….. a gift of reciprocity with me not having to cook.. lol😀
