Two meals in one is always better for a large family!
When I cook, I like to prepare a meal that lasts at least two days. I want to be in the kitchen making a fresh meal every day, but… nah, no, I wouldn’t!
Cooking is time-consuming, but the worst part is the cleanup. If I can remove that stress from my life a few times a week, I will.
Life becomes so much easier when I see a meal that will offer tons of leftovers. I don’t know about you, but I don’t mind reheating a feast for the second time, and that’s just what this meal I’m going to show you today offers.
This meal will leave you with leftovers you can do several things with.




Items you need for the meat
- 2 Roasts or 8 pieces of chicken breasts (sliced in half after cooking)
- Seasonings
- Red wine
- Mushrooms
- Green pepper
- Red pepper
- Cherry tomatoes
Easy Way to Make Mac and Cheese
- 1 box of pasta
- Mozzarella cheese
- Cheddar cheese
- 1 Stick butter
- 1 Pack of cream cheese
- 2 Cups of milk or 1 1/2 cups of milk and 1/2 cup heavy whipping cream)
Items for vegetables
- Bag of carrots or pre-shredded
- Bag of green beans
- Sesame seeds
- White vinegar
- Soy sauce
- Maple syrup
- Season and prep your roast or chicken like you usually would. Cook for 5 minutes on each side for five minutes and flip.
- Add chopped onions, peppers, and tomatoes add red wine and cook on high or 5-8 minutes. Cover and let cook on low/medium heat until fully cooked.
- Add the mushrooms ten minutes before serving. You don’t want them to get hard and chewy if overcooked
- Set on low/ medium heat and cover
Easy Mac and Cheese
- Cook pasta according to the box
- Drain pasta and set aside
- Add butter and chopped onion, sautee and season
- 1 tbsp of flour, stirring until thoroughly melted and smooth texture.
- Add milk, stir until bubbly, then add cheese.
- When the cheese is melted, add pasta, stir and cover, and remove from the stove
Prep vegetables
- Shred carrots
- Rinse and add soy sauce, white vinegar, honey, and sesame seeds maple syrup
- Mix with carrots and serve
~OR~
- Sautee the green beans in Extra Virgin Olive Oil for 3 minutes and remove from the pan
- Once in the bowl, add the same seasonings as carrots, mix, and serve
This meal goes such a long way; you can eat it like this the first day. On the second day, you can have the easy-to-make vegetables alongside sandwiches with the meat.

Looks delicious, Belladona! Since I no longer have to cook for my sons, I cook only three days a week on Monday, Wednesday, and Friday. I have no problem eating the same meal for two or three days.

the best I can usually do is evening meal left overs become lunches for a few days…..and yep, I usually make two or three variations of a meal because of two picky kids
