Summer is an ideal time for savoring delicious and fresh food! With so many vibrant fruits and veggies in season, it’s super easy to whip up healthy meals that are bursting with flavor. Just imagine sinking your teeth into a juicy watermelon on a hot day or savoring sweet, ripe peaches—pure bliss!
And who doesn’t love grilled corn on the cob? It’s a summertime classic that makes every gathering feel special. Fresh salads packed with colorful greens and veggies are perfect for keeping things light and refreshing, and they celebrate all the wonderful produce summer has to offer!
Let’s not forget about grilling up some chicken or fish—they’re great options for cookouts, and you can mix them up with all kinds of delicious sides. And if you’re looking for a cool treat on those sunny afternoons, you can’t go wrong with homemade popsicles made from real fruit juice. They’re a fun and tasty way to beat the heat!
With so many yummy options, summer is definitely a food lover’s dream. What’s your favorite summertime dish? I’d love to hear about it and share some of mine with you!
Here are a few of my go-tos and why they are so special to me
1. Watermelon: This juicy fruit is not just hydrating and refreshing but also low in calories and rich in vitamins A and C, which are beneficial for maintaining healthy skin. It’s a perfect choice for hot summer days, and it’s great to know that it’s not only delicious but also good for you.
2. Berries: Strawberries, blueberries, and raspberries are at their peak in summer. They’re naturally sweet, rich in antioxidants, and can be enjoyed fresh or in smoothies, salads, and desserts.
3. Corn on the Cob: Fresh corn is a summer staple. Grilled or boiled, it makes for a delicious side dish. It’s also high in fiber and provides energy-boosting carbs.
4. Tomatoes: Summer tomatoes are ripe, flavorful, and perfect for salads, sandwiches, or sauces. They are rich in lycopene, a powerful antioxidant with numerous health benefits, including possible sun protection.
5. Zucchini: This versatile vegetable is a canvas for your culinary creativity. Whether grilled, sautéed, or spiralized into noodles, it’s a low-calorie, high-vitamin, and mineral-packed addition to your summer meals.
6. Grilled Chicken or Fish: Lean proteins, such as chicken and fish, are perfect for summer grilling. They’re light, flavorful, and can be paired with a variety of marinades and sides.
7. Popsicles: Homemade fruit popsicles made with real fruit juice or yogurt are a healthier, guilt-free alternative to store-bought options. They keep you cool while satisfying your sweet tooth and provide a boost of vitamins and minerals.
8. Salads: Fresh salads filled with seasonal vegetables, greens, and a light vinaigrette provide a refreshing and invigorating meal option. Adding ingredients like nuts or seeds boosts the nutrition and flavor, making it a perfect summer dish.
9. Peaches and Nectarines: These stone fruits are sweet, juicy, and packed with vitamins A and C. They are delicious on their own or in desserts and salads.
10. Herbs like Basil and Mint: Fresh herbs are abundant in summer, adding flavor and freshness to dishes. They can enhance the taste of salads, drinks, and grilled meats.

I’m a cheese burger in paradise….sometimes with avocado…but fries and pickles, lots of pickles (maybe I’m part Jewish?)…or on a trip to NYC, hot dogs and sauerkraut became a huge favorite..

Your go tos are also high on my list. My favourite dish is a herb salad, a recipe by blogger Daal’s husband. It consists of lots of herbs, nuts, grapes, feta, onions, small cracker bits and a delicious dressing of oil, lemon juice, cinnamon, pepper and salt as well as a touch of sweet (honey, maple syrup etc.)
Anything fresh is good for summer. I wish we could get ripe peaches in Denmark …. or mangoes.
