Look After Yourself Friday

Before I even begin this post, let me explain this one thing to you.

I am in love with fitness, and I also love food. Cooking is one of the things I do to have fun, don’t judge me. We all have different definitions of fun, and one of mine just so happens to be being in the kitchen creating meals and dessets.

So, with that being said, I have a goodie for y’all to try this weekend. Even if you aren’t a big fan of pumpkin, I urge you to give this recipe a try. You can use a large amount of pumpkin puree or not; it all depends on how much of the pumpkin you want to taste.

Ingredients

  • 2/3 cup of pumpkin puree
  • 1 cup butter
  • 1/2 cup sugar
  • 2 eggs yolk
  • 1 egg yolk
  • 2 tsp salt
  • 2 tsp vanilla extract
  • 3 tsp Pumpin spice
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 2 cups All purpose flour
  • 1 1/2 cups dark chocolate chips

Steps

  1. Brown two sticks of butter, cook on low to medium, stir until butter is browned, and pour into a dish. Store in the refrigerator for up to an hour, stirring every 15 minutes.
  2. Spread the pumpkin puree on a plate and pat with several napkins to remove moisture. Set aside
  3. In a mixer, add dry ingredients EXCEPT for FLOUR.
  4. Add one egg at a time, vanilla extract, pumpkin puree and butter to your dry ingredients.
  5. Slowly add flour
  6. Lastly, add the dark chocolate chips.

Don’t overbake; they are delicious when they are soft and chewy!

Preheat the oven to 375 degrees and bake for 9-11 minutes.

How I’m looking after myself today

Today, I’m going to enjoy my couch by slipping into my pajamas and surrounding myself with pillows and covers. I’ll be cozying up to my family while watching a movie and eating a big Greek salad. And, of course, I’ll be sipping on a glass of wine. And tomorrow, I’ll be cheering for my daughter as she dribbles past her defenders to score a goal or two.

  1. for some reason I’m thinking of going back to getting a juicer….way back when it was the thing, there was a doc on Netflix called Hungry for Change, my friends and me all dove in, watched sick fat and nearly dead, I still have crazy sexy cancer and let me be frank on dvd….and replaced a meal a day with juice..me it was using green with either kayle a variety of different kayle and spinach and cucumbers, yams….I loved juicing red peppers……celery…..but instead of juicing, I just cooked more…oh and I learned to hate granny smith apples……I did feel healthy, my GI worked amazing at that time……so maybe…..

  2. My baby girl is doing so well in her netball, touch rugby and hockey too.
    Most times I can’t go and watch her play but from the broad smiles each training and match day I know she is having a ball.

  3. Soft and chewy – they sound great! Hope your daughter’s soccer game was great. We are bundled up at home after going out to take our dog to Puppy Kindergarten. So we’re snuggly – and have a better behaved dog. It’s comforting to me! 🙂

      1. Which is why I don’t bake anymore. Or very rarely. If I make muffins, I wrap them individually and freeze them. Somehow, I STILL manage to go through them quickly!
