I Cheated The Whole Day

Fluffy Strawberry Mousse

Oh, Summertime I smell you getting closer! I am so happy. This is my second favorite time of year, Fall is the best but summer I welcome you with open arms. Summertime for me means busting out my patio furniture, lighting up that grill, planting beautiful flowers outside and cooking delicious light meals and desserts.

Spring However, is my test dummy. I always try out all new recipes and some of them make it to the summer menu and some don’t. This year I started out with a Strawberry Mousse, I will continue to perfect this recipe over the next few weeks. So as of now on a scale of 1 to 10, I would give this a solid 7 but soon it’ll be a 10.

Follow me into my kitchen and let’s get started!

Ingredients

  • 5 whole graham crackers
  • 2 tbs melted butter
  • 2 tsp sugar

The Mousse

  • 2 cups heavy whipping cream
  • 8 ounces of cream cheese
  • 2 cups fresh strawberries
  • 1 tsp vanilla

In a large bowl crush the crackers, add butter and sugar. Mix until it is finely crumbled. Set aside.

In an electric mixer add cream cheese and strawberries. Add vanilla and slowly pour in the cream.

Now time to create the layers. Graham cracker mixture on first and then mousse and proceed back and forth to make as many layers as your heart desires. Then either garnish with a strawberry or more of your sweet tasty crumbs.

One Year Down…​Thank You For Giving Me A Chance

It has officially been 1 year since I started this particular blog and I have been welcomed into the blog world with open arms. I have to admit that every time I write something I second guess myself. I wonder if it’s interesting enough to get you to come back and view another post. I always try to just be myself and that alone is scary.

I remember when I first started my blog I was approached by a well known public figure and he gave me THE BEST pointer. He told me if I wanted my blog to be successive then I had to remain truthful to myself. Choose topics that hit me deep in my core and then just go. Talk the way I do every day, and make sure my personality is present at all times. When he told me this I said well what if people don’t like me or what I have to say?

He responded, “Do you have friends”? “Do they like to engage with you”? “After 17 years does your husband still like you and engage with you”? But most importantly “Do you like you and find yourself interesting”? I thought fair enough!

So here we go! My content is going to be bananas this year, filled with food, diets, crafts, workouts, real talk, and my Life. I am elated to welcome you all to my world.

I know that there are thousands and thousands of blogs that you could have joined or read but you chose mine and I’m honored!

Chocolate Crescent Rolls

I am determined to learn how to make crescent rolls like Meryl Streep on “It’s Complicated”. I absolutely love every bit of that movie but the baker in me keeps rewinding the scenes of her in the bakery. I think I would feel like I had died and gone to heaven if I had a bakery that looks exactly like hers.

One Day I will!!!

Okay, so there is a scene where she is making huge chocolate crescent rolls for Steve Martin and the way she is rolling out the dough and sprinkling chocolate chips is AMAZING!! I swear I have seen that part a thousand times and it will never get old.

Out of total inspiration from this movie… I present to you my chocolate chip Crescent rolls. Stay tuned for a bigger version in the near future.

Ingredient

  • 1 cup Heavy Whipping Cream
  • 12-ounce package of Chocolate chips
  • 1 can of Crescent Rolls or Refrigerated Dough

Sweet Sammie Rae’s Strawberry Cake and Cream Cheese Frosting

I have a slight dislike and LOVE for my kids birthday. Dislike because they are getting older and closer to being adults. That is just a depressing thought for me. So we are going to stop talking about that RIGHT NOW! Okay, Moving on.

I love birthday time because I get to create a new cake and design it anyway my kids desire. I may not be a huge fan of some of the flavors they want me to make. But this isn’t my birthday, so I do what they like. Which brings me to Samantha’s birthday cake this year. She loves strawberry cake and I never knew just how much until now. I have never made this cake and I must admit that I wasn’t very hopeful.

The first thing I did was hit Pinterest for some awesome ideas. I was quite concerned that I would get a bad batch of strawberries which would destroy the flavor of my cake. I then stumbled across a recipe that hit right on my issue. The recipe called for frozen strawberries. I learned that you should always use frozen strawberries because the taste will remain consistent.

Often times the cake batter will call for gelatin but I chose to go without it in my recipe. Not for any particular reason, just didn’t want to use it. Also please note how I always place parchment paper at the bottom of the pans. This is a must for me because I have been known for not greasing my pans enough, which will cause your batter to stick.

Ingredients For a 3 Layer Cake

Preheat Oven 325 degrees

Bake for 25-30 minutes

  • 3 Cups Flour
  •  2 1/4 Cups Sugar
  • 1 1/2 Tbsp Baking Soda
  • 3/4 Tbsp salt
  • 1 Tsp Vanilla
  • 2 Cups Strawberries
  • 3/4 Cups Oil
  • 4 Eggs

Cream Cheese Frosting

  • 16 Ounces Cream Chesse ( (2) 8-ounce packs)
  • 3 Cups Heavy Whipping Cream
  • 1 Tsp Vanilla
  • 1 Cup Sugar

Whip the cream cheese, Vanilla, and Sugar. Slowly add heavy whipping cream. Whip Until stiff peaks form.

Apple Cobbler

The Holidays are here, and it is time to BAKE! There are so many delicious recipes to choose from, and it is so hard to determine just one or two or three or however many you cook on Thanksgiving. I usually like to go with two. If you are anything like me, then you will eat both desserts on the same day. So to keep my health pulled together, I limit myself to only two desserts, even though I want 3….okay 5!


Don’t Judge me!

I have made this cobbler many times and learned something new each time. I know that I have a type of apple that I favor for my desserts. Never thought that I would be so particular but surprisingly I am. I need an apple that is so sweet that I will not have to add a ton of sugar and brown sugar. So my magic duo is envy and honey crisp apple.

Preheat Oven to 350 degrees Bake for 50 minutes, Until Topping is Brown and Apples are Bubbling.

Ingredients

  • 4 Large Honey Crisp Apples
  • 4 Large Envy Apples
  • 1/2 Cup Sugar
  • 1/2 Cup Brown Sugar
  • 2 tbsp. Flour
  • 2 tsp Vanilla
  • 1 cup Sparkling Cider
  •  2 cups Pecans are optional
  • 2 tbsp. Ground Cinnamon

Crust Topping

  • 1/2 Cup Butter
  • 4 Eggs
  • 2 tsp Vanilla
  • 1 Cup Flour
  • 2 tbsp. Ground Cinnamon

Peel, core and slice apples in long wedges and then slice in half. Combine sugar, brown sugar, four, pecans and vanilla. Give it a quick toss. Add in flour and Cider. Spread mixture in prepared butter dish.

In a large bowl combine slightly softened butter and flour. Add in Vanilla and lightly, beaten eggs. Make sure all of the butter and flour is smooth. Spoon mixture over the apples in the baking dish. Bake and serve warm with vanilla bean ice cream.
