Half Homemade Half NOT so Much ~Pineapple Upside Cake~

Greedy to the highest power is how I woke up! 

I dream of food, then I get up and make whatever I dreamt about. That might sound greedy to some, but to me, that’s just the way it goes.

Last night I was dreaming about the last two pineapples we had left from our Maui trip. I have never made a pineapple upside cake, but I knew my family would absolutely love that cake. So as soon as I arrived home from dropping my daughter off at basketball camp this morning, I dove straight into baking mode.

My husband stepped out of his office and said, “It smells delicious in here.”

He wasn’t surprised that I was baking at 10:00 in the morning, but he was shocked to see me with the wine opener. No, I wasn’t drinking wine, at least not yet. I used the wine opener to screw out the pineapple core. It was easy enough, and no, I don’t have the desire to buy the appropriate tool (Video below if you want to see how easy it is to get out the core.)

Half Homemade Half Not So Much

  • 1 box of cake mix
  • 1/2 cup of brown sugar
  • 1 can of pineapples or TWO fresh pineapples
  • 2tsp vanilla
  • 1/4 cup of milk
  • cherries (optional)

Make the cake according to the steps on the back of the box, and then add brown sugar, vanilla, and one whole pineapple pureed. Mix until smooth and place batter into prepared baking pans or bundt pan.

  1. I wanted a round double-layer cake, so I buttered both pans, placed parchment paper on them, and flipped the paper so the butter would be on both sides.
  2. Then I sprinkled the bottom of each pan with brown sugar and fresh round pineapple slices. You can add cherries now, but I chose not to.
  3. Finally, pour the batter evenly over each pan and bake at 350 degrees for 30 minutes.
  4. Flip and serve.

I would have also opened up the wine lol….but, we usually bring back pineapples for friends and family, and forget about ourselves….I remember going to Maui as a kid with my parents and I think (was I dreaming) riding a train through a pineapple farm? near where we were staying (called Napili Shores?)….
