Because it’s Friday and we all need a little chocolate in our life

Fluffy Strawberry Mousse

Oh, Summertime I smell you getting closer! I am so happy. This is my second favorite time of year, Fall is the best but summer I welcome you with open arms. Summertime for me means busting out my patio furniture, lighting up that grill, planting beautiful flowers outside and cooking delicious light meals and desserts.

Spring However, is my test dummy. I always try out all new recipes and some of them make it to the summer menu and some don’t. This year I started out with a Strawberry Mousse, I will continue to perfect this recipe over the next few weeks. So as of now on a scale of 1 to 10, I would give this a solid 7 but soon it’ll be a 10.

Follow me into my kitchen and let’s get started!

Ingredients

  • 5 whole graham crackers
  • 2 tbs melted butter
  • 2 tsp sugar

The Mousse

  • 2 cups heavy whipping cream
  • 8 ounces of cream cheese
  • 2 cups fresh strawberries
  • 1 tsp vanilla

In a large bowl crush the crackers, add butter and sugar. Mix until it is finely crumbled. Set aside.

In an electric mixer add cream cheese and strawberries. Add vanilla and slowly pour in the cream.

Now time to create the layers. Graham cracker mixture on first and then mousse and proceed back and forth to make as many layers as your heart desires. Then either garnish with a strawberry or more of your sweet tasty crumbs.

Breakfast Is Served

What is your favorite meal to eat every day? I love breakfast. I like to get up drink 28 ounces of water as soon as my feet hit the floor. When I’m focusing One leaning out I get up at 5 o’clock in the morning and I work out for 60 minutes then I eat. I’m a typical person, I’m not a big fancy breakfast eater I keep it simple.

My go to breakfast is a cup of coffee, a sausage, cheese and mushroom omelette. Then on the side I either have an avocado or a vegetable mix. Now let me be honest if I had a chef I would switch it up. You know switch it to something super complicated and fancy. My breakfast would look like it belonged on a magazine cover.

But since my life is not set up like that at this current time I keep it simple and yet tasty.

Ingredients

  • 2 eggs
  • Mushrooms
  • Sausage
  • Mozzarella cheese
  • Cheddar cheese
  • 3 tbsp Milk

Place your sausage and a large heated pan. Once it is completely browned remove.

In a small bowl beat eggs and milk mixture together and add to the same pan that was used to cook your sausage. Let cook on medium heat for 2 minutes and then add mushrooms, sausage and cheese. Cook for 3 minutes moving the pan around so that the uncooked yolk can find its way to the heated pan. Then fold the omelette in half and flip.

Serve warm and add an avocado for a tasty side.

How to gain 5 pounds in 10 minutes Mac and Cheese

Maybe it’s just my metabolism but I think I could gain 5 pounds just by sniffing this mac and cheese. I’m used to making my mac and cheese with cauliflower (https://belladonnasflashlight.blog/2018/06/22/cauliflower-mac-and-cheese/ ) but this time I went all out and made sure I had all the ingredients that would make my greedy husband and son smile.

I didn’t hold back on the calories with this goody and sometimes you shouldn’t but just be mindful of your servings. Portion control is everything and a little exercise before consumption is highly recommended.

Oven on 375°

10 to 12 servings

Ingredients

  • 1 Box of pasta
  • 3 eggs
  • 3 cups of milk
  • 3 tbs butter
  • 2 cloves of garlic or 1tbs of garlic powder
  • 1 cup mild cheddar
  • 1 cup sharp cheddar
  • 1 cup mozzarella
  • 1 cup parmesan cheese

Cook your pasta as suggested on the back of the packaging. Drain and shake parmesan cheese and melted butter on top and set aside.

In a large bowl add your eggs, milk garlic powder pepper and salt. Stir until everything is mixed thoroughly. Set aside.

Sprinkle your cheese all on top of your pasta in a large nonstick pan. Then pour your milk mixture on top. Using a wooden spoon push down on the mixture to make sure your milk is evenly distributed on your dish. Place in oven for 35 to 40 minutes. Let cool for 5 to 10 minutes and serve warm.

Southern Tasting Apple Cobbler In A Crock Pot

I have tried several ways to make my apple cobbler and apple crisp but this is by far the best way. I promise you will love it and refuse to make any other way. This recipe is short, easy and to the point. I bet you have everything you need right in your cupboards.

You literally need 15 minutes and then 2 hours to let it cook in your crockpot. I always make this when I’m invited to a party or trying to lift the mood of one of my kids or husband. I want them to feel that I deeply care about their problem but the truth is I don’t have time to REALLY care unless it’s a serious issue. Fortunately, haven’t experienced that just your average teenage meltdown.

INGRIDIENTS

  • 5 Large Red apples
  • 1 Box of yellow cake mix
  • 1-1/2 Sticks of butter
  • 2 Cups of sparkling cider
  • 3/4 Cups of brown sugar
  • 2 tsp Vanilla
  • 2 tbs Cinnamon

Place crockpot on high to begin warming for your delicious dessert.

Slice apples very thin and place in a large bowl. Add cider, brown sugar, vanilla, and cinnamon. Stir until and place mixture in heated crock pot.

Add yellow cake mix on top of crockpot mixture, melt butter and pour top. Cook for 2 hours. Unplug crockpot and let cool for 15 minutes before serving. Serve with two scoops of vanilla bean ice cream.

The Best Broccoli​ Cheese Sou

It’s cold outside and we all need something warm to eat. I can’t think of anything better right now than soup. But let’s make it fun and skip using a bowl for our soup. Follow me into the kitchen to see what I mean.

So,  I love to make my meals fun for my family. They enjoy when I take a few extra minutes in order to spice it up a bit. I like the look on their face when they walk into the kitchen and see something so simple and think it’s so great. I get most of my ideas from different restaurants and I think of the fun ways they serve their meals and then recreate it at home.

The recreation today was broccoli cheese soup with a bread bowl.

Ingredients -Makes 6 soup bowls

20 minutes to prep and 20 minutes to cook

  • 1 large onion
  • 2 cups carrots
  • 2 cups of milk
  • 2 cups chicken stock
  • 2 heads of broccoli (florets only)
  • 1 stalk of celery
  • 2 cups sharp cheddar cheese
  • seasonings Salt and pepper
  • 2 tbs butter
  • 3 tbs olive oil
  • 3 tbs flour

I love to go to the store and hope that they are out of the bread that I want so they can make it fresh. If I ask they will do it regardless. They treat me well because I’m always there.

In a small pan pour in olive oil and saute the onion. Cook for 5 minutes until it is translucent. In a large pan add flour and butter until blended. Add in milk, stock, onions, and all the other diced vegetables. I use a food processor because I prefer small pieces of vegetables in my soup. Season lightly with salt and pepper and let simmer for 20. Add cheese and serve when melted.

Cut the bread bowl in a circle and take the top off. Pull a small amount of the bread out from the inside and start filling it up with your delicious soup.

I Won’t Let You Leave With That German Chocolate Cake

So you think you are just going to grow up and leave me huh? Not so fast their baby boy. I know when you look in the mirror you see someone that is 6’3, facial hair, and body becoming more muscular. But that not me. I’ll tell you what I see.

On February 10, 2004, I gave birth to the most beautiful baby boy. He instantly stole my heart and I stole his. I could not go into another room without him wanting to be right with me. I remember the first time that I enrolled Elijah in a camp. We would only be separated for 4 hours and his big sister would be in the next room. But that didn’t matter to him. He cried and the instructors told me just to go and they would hold him until he calmed down. But the funny part is, when we walked through the doors the instructors thought he was at least 4. They were shocked when I told them he was 2.

When I returned to pick them up, there my baby was sitting on one of the instructor’s lap. She couldn’t have been more than 5’2 and 115 pounds. So he looked gigantic sitting on her lap and still in tears. When he saw me he ran towards me and leaped into my arms. That memory is forever engraved in my brain. I loved that moment so much! I think I missed him more than he missed me.

So yeah that’s what I see when I look at you. My curly head sweetie pie that needs his mama.

So needless to say when told me that you wanted a German Chocolate Cake for your birthday, I was honored to make it. He’s my baby and I’ll make him anything.

Ingredients For The Cake

Please note that I doubled the recipe for the cake only. I prefer bigger cakes.

Heat oven to 350 degrees Cook for 30-35 minutes

  • 1 pkg (4oz) Bakers German’s sweet chocolate
  • 1/2 cup water
  • 4 eggs separated
  • 2 cups flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup butter
  • 2 cup of sugar
  • 1 tsp vanilla
  • 1 cup buttermilk

Cover bottoms of the pans with parchment paper.

Heat up your chocolate and water for two minutes stir until chocolate is completely melted.

Beat egg whites and small bowl with until peaks form and set aside.

Combine flour baking soda and salt. Mix butter and sugar in large bowl with mixer until light and fluffy. Add egg yolks slowly and beating well after each yolk. Add and melted chocolate and vanilla. Then flour mixture alternately with buttermilk and blending. Add egg whites stir gently to blend it then pour into prepared pans.

Please cakes on cooling rack for 15 minutes before frosting.

Ingredients For The Coconut Pecan Frosting

Enough for 3 Large round cakes or 36 cupcakes

  • 4 egg yolks
  • 1 can evaporated milk 1-1/2 tsp vanilla
  • 1-1/2 cups sugar
  • 3/4 cup butter
  • 1 pkg ( 7 ounces) Bakers Angel Flake coconut
  • 1-1/2 cups chopped pecans
  • Whisk egg yolks milk and vanilla and large sauce pan until blended add sugar and butter cook on medium heat 12 minutes stirring constantly until it’s thickened and golden brown. Remove from heat and add coconut and nuts mix well and let it cool for 15 minutes.

Makenzie’s Deadliest Chocolate Cake

There is nothing worse than seeing a cake that takes your breath away and then you taste it. It’s thick, dry and you are choking to death. Talk about major buzz kill!!!! Well, push that bad experience aside because I have a treat for you.

Over the weekend I made 2, triple-layer chocolate cakes and the frosting was made from peanut chew candy bars. I have never made a frosting out of a candy bar but I was excited to try something different and mix it up a little bit.

Ingredients:

  • 6 eggs
  • 3- 3/4 cups Flour
  • 2 cups  Sugar
  • 3/4 cup Brown Sugar
  • 2 cups Dark Cocoa Powder
  • 1 1/2 cups melted butter
  • 2 cups Buttermilk
  • 1-1/2 cups Coffee
  • 2 tsp Salt
  • 2 tsp Vanilla Extract
  • 3 tsp Baking Soda
  • 3 tsp Baking Powder
  • Parchment paper

In a large bowl combine all of your dry ingredients and mix together. In a separate bowl add all of the wet ingredients, whisk and slowly add in your dry ingredients.

Line your 3 pans with parchment paper and leave a little extra paper on all sides of the pan. This will make it easier to remove the cakes from the pan.

Bake on 350 degrees for 35 minutes and let cool for 10 minutes before removing from pan.
