Ironic or Sincere: How Offensive Memes Harm Our Generation — Sammicakes

Early this week, an absolute (white) genius at my school posted the above meme to his Snapchat story, and— surprise, surprise—he got beat up by two African American kids the next day. Did he deserve it? Was the joke even funny enough to make a double-team, round-house kick to the face worth it? Honestly, […]

More Than A Woman

What does it mean to be “more than a woman”? I’ll never forget the first time I watched “Saturday Night Fever” starring John Travolta, and the most fascinating song to me was playing. The lyrics go a little like this…

Girl, I know you very well
I’ve seen you growing everyday
I never really looked before
But now you take my breath away

Suddenly you’re in my life
Part of everything I do
You got me working day and night
Just trying to keep a hold on you

Here in my arms, I found my paradise
My only chance for happiness
And if I lose you now, I think I would die
Say you’ll always be my baby we can make it shine
We can take forever just a minute at a time

More than a woman
More than a woman to me
More than a woman
More than a woman to me
-Bee Gees-

I want to be more than a woman to you. Because I’m so much more than that to me.

5 Tips That Will Prevent You From Becoming A Drunk While Raising Your Son

When my son was 2 I thought that I was going to pull my hair out. I have never in my life seen something move so fast and destroy the house in seconds. I learned quickly to only buy decorations from the Dollar Store because they won’t be around long. As soon as my human tornado saw a new decorative item it was as good as gone. But he was a little curly head cutie and I could not stop kissing him and squeezing his fat squishy body. But the squishy body started to grow and grow and grow and lean out.

My curly head cute tornado turned into a stunning teenage boy. But dear God give me strength because he is still a tornado. Just in a different way. Put it this way when it is time for spring break, summer break, Christmas break or any other break I sigh with RELIEF! I am exhausted from holding my foot up this boy’s behind. One year I was so upset with his grades and I said to him, “Boy I think you are purposely trying to kill me”. That might sound dramatic but I am so freaking serious. That is how I felt.

He is brilliant but lazy. When he studies he gets 96% or 92% on EVERYTHING and then he gets comfortable and it’s downhill from there and I want to scream!!

However, over the years these 5 basic tips have relieved my stress and prevented me from becoming a crack head or alcoholic.

  1. Stay firm no matter how cute you think they are. At the end of the day, cuteness doesn’t matter. I’m looking skin deep. My end goal for my son is to become a productive and well educated GOOD man. I refuse to have a grown man still depending on me financially. As long as my son lives under my roof I will sacrifice and make sure he has everything he needs to succeed. But then he is expected to use all the tools we gave him.
  2. Make him stay connected with the Lord. The bible will just instill good values and make them want to be a good person and be mindful of the feelings of others
  3. KEEP them in sports or any extracurricular activity that will take a good deal of their time. You have to keep them busy and teach them time management. Sitting around playing video games and looking like a damn zombie at the screen will not teach them a thing.
  4. Don’t let them date until they are able to control their mood swings. If you let their all over the place mood meet up with another teenager that has major uncontrollable moods then you are in for a world of danger. You have these two annoying kids feeding off of each other and making their moods even more darkened. What’s worse than 1 crazy? Yeah, you guessed 2 crazies!
  5. Don’t give up not even on their darkest days. Let them know that they are loved but you expect greatness and respect. Make sure they know that you will not let that death grip go.

When I tell you that I will die for my son, I mean that with my whole heart. If I have to go without so that he can have then that’s what I will do. When I had children I knew that I was going to raise them the best I could and pray that they become better than me. So when you see them slide it breaks your heart. But if I have to grab him up by the collar and stare at him while he is in class in order to make sure he is doing the right thing. Then guess what? That’s what I will do.  I refuse to have him slide to the point of no return.

I’ll keep you all posted on his progress.

Enchiladas The Keto Way

Sometimes I lie in bed thinking about food and what I should make for dinner the next day. Did I mention that I’m full when I do this? As you all know I love Pinterest and that is my go-to spot to find awesome meals.

Well, just the other day I stumbled across a real beauty. I look for low carb meals to prepare for dinner. So, I mostly rely on Keto recipes. But I have to either reduce or eliminate the cheese on the desired meal.

I always add more carbs to my meals for my family. So after I remove my portion I will then continue to prepare their dish. For instance, I added black beans to the enchiladas and then wrapped the mixture into soft shells. For my Pescatarian I added meatless sausage and all of the same ingredients below.

Once you get used to preparing 3 separate meals for everyone you will move quickly through the kitchen.  A sense of pride will come when you discover a multitude of ways to prepare the same meal that will please everyone.

Okay 4 ways to eat this

  1. Over a bed of lettuce
  2. Over Cauliflower Rice
  3. Soft shell or hard shell taco
  4. Meatless Sausage

INGREDIENTS

  • 1 Pound skinless chicken thighs
  • 1 Onion
  • 3/4 cup Enchilada Sauce
  • 1/4 cup water
  • 3 Avocados
  • Cheddar Cheese
  • 1 4 ounceGreen Chile peppers
  • 2 Tbs Coconut Oil
  • Iceberg lettuce or your choice of lettuce

Non Keto Add in

  • Black beans
  • Soft tortilla shell

Pescatarian Add in

  • Meatless Sausage separate pan

And all the same ingredients listed above

In a large heated pan add coconut oil and sear both sides of chicken breast. Remove from pan and add onion enchilada sauce water and green chili peppers add shredded chicken thighs back to the pan or keep them whole.

If using meatless sausage cook it the same way and at the same ingredients.

Next the choice is yours. Choose one of the four options or all of them. 😁

How To Fail On Your Diet

Do you want to know how to fail on your diet? I have lots of experience at this and I’m not ashamed to admit it either. Failing was a part of my journey and that’s why I became interested in the health and fitness industry. Trust and believe that I am a pro at failing and I learned from all my mistakes. So hopefully I can help a few people with this post.

The number one complaint I get from clients is, I can’t lose weight from any diet that I try.

What do you think I’m going to say?

STOP GOING ON DIETS!!!!! You have to make a lifestyle change and do something that is sustainable for the rest of your life. Diets are okay If you have to lose a massive amount of weight because your doctor is concerned about your test results. But they will place you on a specific diet that will help you get into a safe place. Then you have to take over from there and learn how to make better choices in all areas of your life.

Firstly please know that sleep deprivation will cause you to keep on unhealthy weight as well as cause chronic conditions, ages you, cause depression and that’s just to name a few. Choosing a good bedtime is just as important as choosing a healthy meal or drinking water instead of soda.

I don’t think there is anything wrong with trying the Keto diet if you are trying to jump-start your weight loss. But I do have concerns and would advise all my clients to see a certified nutritionist if they wanted all their meals to be Keto based for longer than a week. You want to make sure that you are getting the appropriate amount of nutrients and a nutritionist will see that you are.

I personally have to choose Keto or low carb meals for my dinner. Me and carbs have an evil relationship. I can NOT eat carbs after 3:00 pm. I found that out after years of battling with weight. Now don’t get me wrong I do eat carbs, but just not for dinner.

I wish everyone well on their weight loss journey. I smell success ahead!

Southern Tasting Apple Cobbler In A Crock Pot

I have tried several ways to make my apple cobbler and apple crisp but this is by far the best way. I promise you will love it and refuse to make any other way. This recipe is short, easy and to the point. I bet you have everything you need right in your cupboards.

You literally need 15 minutes and then 2 hours to let it cook in your crockpot. I always make this when I’m invited to a party or trying to lift the mood of one of my kids or husband. I want them to feel that I deeply care about their problem but the truth is I don’t have time to REALLY care unless it’s a serious issue. Fortunately, haven’t experienced that just your average teenage meltdown.

INGRIDIENTS

  • 5 Large Red apples
  • 1 Box of yellow cake mix
  • 1-1/2 Sticks of butter
  • 2 Cups of sparkling cider
  • 3/4 Cups of brown sugar
  • 2 tsp Vanilla
  • 2 tbs Cinnamon

Place crockpot on high to begin warming for your delicious dessert.

Slice apples very thin and place in a large bowl. Add cider, brown sugar, vanilla, and cinnamon. Stir until and place mixture in heated crock pot.

Add yellow cake mix on top of crockpot mixture, melt butter and pour top. Cook for 2 hours. Unplug crockpot and let cool for 15 minutes before serving. Serve with two scoops of vanilla bean ice cream.

Crowded Places

Never really reacted to well in a crowded place. Following behind others hopes and dreams, afraid to be seen as an individual or different if you will. Living behind the shadows of the ones that I admire until they disappoint me with revealing their own insecurities and guilty pleasures. During their reveal, you realize their human, nothing special. Just a mediocre gutless, spineless, mortal that too chooses to hide in crowded places. So I advise you to step away from the crowd and find out who you are.

I remember being a kid and looking up to and worshiping this one individual. I can’t even put into words how I felt when I saw them fall and burst into flames right before my eyes. Their ashes fell to my feet and I gently stepped over them and made a promise to myself. I swore that I would never feel that level of disappointment again. I distanced myself from all crowded places.

Working on you becomes satisfying and complete when you separate yourself from all the unnecessary noise. Some may view you as reclusive but really you function more effectively without drivel. Once I evacuated from the crowded place I could breathe and see all the perfections that I carry. I stopped telling myself that I’m not good enough, but I’m worthy. Crowded places will have you guessing your self-worth and hesitation becomes your companion. Until you remove yourself you can’t help but compare and compete. Which, in return will more times than not end in disappointment. But with space, you will learn that the best competition is you vs you.

With self-growth and maturity, crowded places are just that. Crowded and leaving you without room to grow into being your own hero.

The Best Broccoli Cheese Sou

It’s cold outside and we all need something warm to eat. I can’t think of anything better right now than soup. But let’s make it fun and skip using a bowl for our soup. Follow me into the kitchen to see what I mean.

So,  I love to make my meals fun for my family. They enjoy when I take a few extra minutes in order to spice it up a bit. I like the look on their face when they walk into the kitchen and see something so simple and think it’s so great. I get most of my ideas from different restaurants and I think of the fun ways they serve their meals and then recreate it at home.

The recreation today was broccoli cheese soup with a bread bowl.

Ingredients -Makes 6 soup bowls

20 minutes to prep and 20 minutes to cook

  • 1 large onion
  • 2 cups carrots
  • 2 cups of milk
  • 2 cups chicken stock
  • 2 heads of broccoli (florets only)
  • 1 stalk of celery
  • 2 cups sharp cheddar cheese
  • seasonings Salt and pepper
  • 2 tbs butter
  • 3 tbs olive oil
  • 3 tbs flour

I love to go to the store and hope that they are out of the bread that I want so they can make it fresh. If I ask they will do it regardless. They treat me well because I’m always there.

In a small pan pour in olive oil and saute the onion. Cook for 5 minutes until it is translucent. In a large pan add flour and butter until blended. Add in milk, stock, onions, and all the other diced vegetables. I use a food processor because I prefer small pieces of vegetables in my soup. Season lightly with salt and pepper and let simmer for 20. Add cheese and serve when melted.

Cut the bread bowl in a circle and take the top off. Pull a small amount of the bread out from the inside and start filling it up with your delicious soup.

Not Your Grannies Meatballs

Whenever I think about meatballs I’m like umm no thanks! They always look so dry. Which is why I hate meatloaf and meatballs are right up there in the same category. Well, they use to be but now I am in love with meatballs. I was determined to find a way to make a good meatball sandwich or pasta and meatballs. So guess where I found it? if you said Pinterest then you were right.

I have been trying to find more Keto inspired dishes. I can do without the carbs in the evening but my family shouldn’t have to. Keto dishes makes life so easy for me. If you look back at some of my meals you will see that I have provided the option of keeping your dish totally Keto or adding carbs.

Not only do I have to cook Keto and non-Keto dinners but I also cook for a pescatarian.  My trick is t make enough of each meal that will last for two days. Leftovers are a must in this house.

Without further ado lets move on to the meal.

OK, here is option #1 Huge sub rolls for my carb babies

Option #2 meatballs and salad for me. I like plain Caesar salad if I’m having a saucy dish.

And option #3 vegan meatless sausage for my vegetarian baby.

Whew! Let’s get these Ingredients out

Will make 12-14 medium meatballs

Will make 5-6 medium vegan meatballs

  • 1-pounds of ground beef
  • 2 tbsp Basil
  • 1 tbs Garlic Powder
  • 2 tbs Oregano
  • 2 tbsp Pepper
  • 1 cup Mozzarella Cheese
  • 1 cup Cheddar Cheese
  • 1/2 cup Parmesan Cheese
  • 1/2 Vegan Meatless Sausage roll

In a large bowl can buying your meat seasonings and all of your cheese. Mix it all up and form the balls into your desired size.

Place in a nonstick pan that is coated with extra virgin olive oil on the bottom. Place the meatballs with a small space in between each one. Cook on 375° for 20 to 25 minutes.

At this point, you can either eat the meatballs with a salad or from my carb lovers have it with pasta or a meatball sub.

If you choose to make a meatball sub make sure you remove a little of the bread on the inside so the meatballs will be able to fit properly. Then place three meatballs inside of the sub sprinkle cheese on top and bake for five minutes.

The Truth Will Set You Free But First It’ll Piss You Off

“The truth will set you free but first it’ll piss you off”. No truer words have ever been spoken. The truth will sting your soul and crush your thought process if you aren’t willing to receive it. I know that the truth is a hard pill to swallow but if growth is what you are looking for then you have to take the truth pill.

I mean think about it. How many times do we have to bump our heads and fall before we take a sit and listen to constructive criticism? How often do we have to set ourselves back 10 steps because we refused to take advice? Then when we fail, we look to those same folks for a hand or an ear. I don’t know about you but I’m so over listening to nonsense.

I have been a part of the health and fitness industry since the day I took the oath to protect and serve my country. So please believe me when I tell you I have heard every excuse in the book when it comes to fitness journeys. But the truth is if you want a healthy lifestyle bad enough you will do whatever it takes to achieve it, to win it and to own it.

The truth is you have to eat right, you have to work out, and you have to change your mindset. There aren’t any short cuts and there isn’t an easy way out. You have to stop looking for a quick fix and you have to be willing to hear the truth. No matter how painful it is to hear what you have to do to get from A to B, you have to listen and be willing to execute.

I have had the truth hit me in the stomach like a ton of bricks. Did I like it? Hell no! It pissed me off because it hurt. It hurt my pride and for short while my self-esteem. But in the end, the truth saved my life and I will never forget that moment.

Here I am in the summer of 1994, I thought I was prepared for the military, my eating and work out habits were amazing. I felt like I was gaining strength internally as well as externally. But to my surprise, I had an abundant amount to improve on.

My first week in the military my drill sergeants did not hesitate to tell me that they thought I was weak. My heart dropped when they told me that. But they weren’t done. I was told that I wouldn’t last because I couldn’t do more than 4 push-ups in a row, I didn’t stand up for myself against some of the other soldiers in my platoon I was to quiet and I hid behind everyone else. Try swallowing that!

They pissed me off because the truth tore me up. Here I am 18 years old in South Carolina all by myself and receiving truths about me that I didn’t want to hear. I couldn’t run from it, I had to deal with it. And That’s just what I did. When the lights went out at 2100 hours I was up doing pushups, holding my planks and mentally connecting with myself. By the end of boot camp I dared anyone to even think about giving me a cross look. I was still quiet because that’s just who I am. I’m more of a listener than a talker. That’s just something that can’t be changed by my courage can and was.

Because I was able to accept the truth I became a platoon leader, push-up queen, and one badass motha…shut yo mouth.

I’ll never forget Drill Sergeant Henry and Drill Sergeant Jellen. They saved me, by exposing strength that I didn’t know I had. I allowed their truth to piss me off so that I could gain my freedom!

Is it time for you to get pissed off?
