Ravioli with Sautéed Spinach

I love the month of December so much. It is a beautiful time of year, and for me, it’s a great time to cook and bake. I hope all enjoy some of these delicious and easy to prepare meals.

During Thanksgiving, I prepared Ravioli with a light cream sauce, and we LOVED IT! But this time I wanted to try it with my favorite pasta sauce. You can find how I prepare my sauce in a previous post. In that post, you will learn how to amp up your can sauce as well as making a homemade sauce. Either way, you will be pleased with the result.

I chose to amp up my favorite can sauce with this particular recipe. I was rushing against time and trying to get dinner on the table quickly. So I grabbed up one of my new favorite items from Target and broke out the pots and pans.

I can’t express enough how much I love the Ravioli from Target. It has a fresh taste and ingredients that I can pronounce. So that’s a win. If I can read them, I can eat it!


  • 1 package of Ravioli
  • 6 to 8 cups of Spinach
  • 2 TBSP Extra Virgin Olive Oil
  • 2 TBSP of Black Pepper
  • 2 TBSP Garlic Powder or 2 cloves of Garlic
  • 3 TBSP of Oregano

Bring water to a boil and cook Ravioli for 4-5 minutes, drain noodles and set aside. In another pan add olive oil to a warm pan, spinach, garlic powder or garlic cloves, black pepper, and oregano.

Cauliflower 🍕 Pizza

I like to have fun when I cook.  There is always music on, dancing or jokes being told. Every night dinner is a BIG DEAL. To us dinner is a special time carved out in our day to try different food, and just LETGO!

So, today we decided to relax and enjoy each others company while making cauliflower crust pizza. This was so easy and there are several different ways to make the crust but this is my preferred method. The only step that I forgot to put in the video was of me blending the cauliflower into small bits with my mixer.

Cauliflower Crust

  • One large head of Cauliflower
  • 1/2 cup of Italian Seasoning
  • 1 1/2 – 2 cups of flour
  • 1 egg
  • Bake on 375 degrees for 25 min

Add toppings and bake for 10 additional minutes on 375 degrees.

Eggs, Grits, Corn Beef Hash, and Cheese All In One Pot

I can not tell you enough how much I LOVE breakfast. I go on Pinterest, Food Network, Blogs and Instagram for daily ideas. I appreciate a variety of choices to bounce from. Some are healthy and some are well….. not so healthy but its a balance that will make sense if your activity level calls for it.

If you are increasing your workout like an athlete, then this is the perfect meal for you. Now I know we want to believe that we are all athletes because we workout. But athletes will typically workout for 2-3 hours a day and sometimes more. So if you are burning calories at a high rate then this breakfast is for you. Taco Pizza Time…You know you want it!

Fam what’s your weakness?

FOOD!! (gotta sing it though like Salt and Pepa)

Okay so this is something that I came up with because I had a huge craving for Mexican food. I knew that I didn’t want tacos again and I didn’t want to make my own crust, so this was perfect.

Okay, now drop what you are doing and get to cooking!

Best tip I can give you is watch and make sure that you aren’t seasoning one part of the meal to much. Season a little through out your process.

Note pertaining to the crust

Before you add toppings to pizza crust

  1. Heat the crust on 350 degrees for 5-10 minutes
  2. Add toppings and cook for 10-15 minutes

Dinners Up!

I have currently cooked for 19 years straight. My greedy crew keeps me busy in the kitchen. So coming up with new meals can become a challenge. I get bored if I cook the same things over and over again. So in order for me to come up with great ideas, I depend on Pinterest, YouTube, Instagram, and Food Network. I take meal ideas and I tweak them.

So enough writing lets get to the good stuff.

Shrimp Pasta….this can get boring but you have to be creative and fearless in the kitchen. Think about your favorite restaurants and what you loved about them. Did they have a sauce that really make the dish stand out? Now just think about the taste and try to match it. Yes it’s that simple.

  • First things first cook the linguine according to the directions on the package
  • Coat your pan with EVOO and 2 tablespoons of butter
  • Sautee spincah
  • garlic
  • mushrooms
  • add shrimp last
  •  toss in the pasta
  • add a cup of milk (I use plant based)
  • 3 more tablespoons of butter
  • add in your salt pepper, toss and then sprinkle with parmesan cheese

Garlic Bread- use any type of bread and rub a generous amount of garlic butter, EVOO and pepper on the bread and place in a 400 degree oven for 10 minutes.

Put fear to the side and get in that kitchen and be creative.


Misery Loves Company

So you thought that I would let you come into my life and drag me down to your level? So you thought that It would be easy to get me to swallow predigested thoughts and feelings? I bet I surprised you…huh? You see when God made me, he made a force, a tornado, a tsunami. The only thing that can control and move me….IS ME. My strength will either scare you or motivate you.

Sad to say, I wasn’t always this way. I had to be broken before I could be royal. No matter what heartache or disappointment I go through on any given day, I remind myself that I am royal.

It took a long time for me to have confidence and determination, The things that gave me hope and an escape were denied to me. I held a grudge for years, hell I still do at times. But I press on. Now that I am in control of my on desires I take full advantage of my freedom.

From an early age I knew I was different. I knew my opinions, views, outlook on life and desires were unlike others that I knew personally. You see when I was a young girl I knew that I wasn’t supposed to be denied the right to live out my passion. I knew that I wasn’t suppose to be in a young relationship with someone that talked about me, hit me and treated me less than human. You better believe when I made my move I never looked back. I knew that certain people in my life were miserable and wanted me to be the same.
The funny thing is, I thought that, the phrase “misery loves company” referred to youngsters but so not the case. I see misery on a daily basis (between adults) within my career and in a variety of other areas. I am faced with people on the daily, that would rather see you fall and bust your face wide open then to see you get ahead in life. Whether you are getting ahead financially, physically, or spiritually it bothers the broken spirits that you surround yourself with.

The only time you will win is when you get real with yourself and start weeding out each and every individual that are celebrating your failures. Weed out the ones that are happy to see you just be mediocre…like them. Weed out the ones that are trying to get you to stop doing something you love. Weed out the people that are okay if they hurt you. You should not feel hurt, discomfort, pain or confusion if you are around people that truly care about YOU!

Let misery keep itself company! You are ROYAL….
