The other day I was looking for a new way to make my tacos. I am so over using the same sauce and getting the same taste. Now don’t get me wrong I love the way my tacos taste, but I just needed a CHANGE!
So there I was browsing through Target picking up all my produce, and I was about to grab my limes. I always use limes in my tacos, but something came over me that made me put them down.
I walked down the aisle to get my soft shells and black beans. Then all of a sudden, I saw a pack that said Barbacoa. I never saw this in a pack by the taco ingredients. It may have been there for years, but unfortunately, I walked right past it.
Barbacoa is usually paired with beef, but I’m trying to stay away from beef and eat more chicken thighs. (chicken thighs are the healthiest part of the chicken). I was so pleased about how this recipe turned out, and the best part is, it only took 30 minutes.

- 8-10 Chicken thighs
- 1 Large red pepper
- 1 Large green pepper
- 1 Sweet white onion
- black pepper
- 2 packs of Barbacoa packs
- Tortilla shells
