Curry Coconut Chicken

Today I am making Coconut Curry Chicken.

I urge you to stick around if you like Curry. This week I made a dish that will make you look like a hero. I can have you in and out of the kitchen in 30 minutes, but everyone around you will naturally assume that you had been cooking for hours.

Usually, when I make something this delicious, I have to spend at least 35 minutes making my rue. So that’s what makes this dish extra special to me. The sauce taste takes 10 minutes, and you aren’t missing any great flavors that you get with your 35-minute rue.

I really like the idea of everyone, being able to look at a pic and grab all the items required. If you are anything like me, then sometimes you aren’t quite sure what a “new to you” ingredient looks like.  Which leaves me googling for a picture.

Curry Coconut Chicken

Servings 6-7

  • 3 lbs Chicken tenderloin
  • 4 tbs Coconut oil
  • 1 Large onion
  • 2 tbs Ginger root
  • 2 Red peppers
  • 2tsp Garlic
  • Salt
  • Pepper
  • 1 Can Curry Sauce
  • 4 tbs Curry powder
  • 2 tbsp Brown sugar
  • 2 tbs Lime juice
  • Basil for Garnishing

This dish goes great with rice. (cook rice according to package)
