So TikTok seems to be the thing during this pandemic, but I will not. I repeat I will not take the bait and join this insane trend. However, when I see something about good food, I tend to take a second look.
Now, I’m not saying I will bend a knee to this trend, but I will see the food challenges when they hit YouTube.
Which brings me to the point of my post!
I was on YouTube at about 11:00 the other night, and I came across another TikTok challenge or whatever you want to call it. It involved food, so of course, I had to join in.
But for me to truly enjoy my new found joy, I had to make it a bit healthier than the other TikTokers. I used the go-to recipe that I’ve been using for a month or so.
I was in search of a healthier pancake and waffle option, so I chose this one. Oatmeal Banana Pancakes. If you put this recipe with the mini size pancakes and a drizzle of warm maple syrup… you get a bite of sunshine.
Yes, sunshine in a bowl, and who can’t use a little bit of sunshine right now?
