Happy July!!!! Let’s begin this month on a healthy note. I have an amazing recipe for you today.
On July 15th we are starting our weight loss and get fit before the year is up challenge. I want you all to be a part of it and what better way to get your body ready than this.
Are you ready to get to cooking?
Ingredients
- 4 eggplants
- 1 can of pasta sauce
- 2 cups mozzarella cheese
- 1 cup of parmesan cheese
- salt
- pepper
- olive oil
- onion
- red pepper
- 1 tbs basil
- 1 tbs oregano
- Cut the center of the eggplant and dice into cubes
- Sautee in an olive oil coated pan and add onion and pepper
- Season to taste and let cook until everything is soft
- Add basil and oregano and let simmer
- Remove from pan and place inside a large bowl.
- Either add the sauce now or while the mixture is still in the pan
- Once the mixture is in the bowl add 1 cup of mozzarella and parmesan and stir
- Oil the inside of the eggplant and then place the eggplant mixture inside
- Add remaining cheeses on top
