Stuffed Eggplant

Happy July!!!! Let’s begin this month on a healthy note. I have an amazing recipe for you today.

On July 15th we are starting our weight loss and get fit before the year is up challenge. I want you all to be a part of it and what better way to get your body ready than this.

Are you ready to get to cooking?


  • 4 eggplants
  • 1 can of pasta sauce
  • 2 cups mozzarella cheese
  • 1 cup of parmesan cheese
  • salt
  • pepper
  • olive oil
  • onion
  • red pepper
  • 1 tbs basil
  • 1 tbs oregano
  1. Cut the center of the eggplant and dice into cubes
  2. Sautee in an olive oil coated pan and add onion and pepper
  3. Season to taste and let cook until everything is soft
  4. Add basil and oregano and let simmer
  5. Remove from pan and place inside a large bowl.
  6. Either add the sauce now or while the mixture is still in the pan
  7. Once the mixture is in the bowl add 1 cup of mozzarella and parmesan and stir
  8. Oil the inside of the eggplant and then place the eggplant mixture inside
  9. Add remaining cheeses on top
